Scariest Vegetable Ever

One of the joys of belonging to a CSA is trying to figure out what to do with mystery vegetables. Exhibit A: the celeriac root.

At the Kindergarten where I worked, we got all of our vegetables from a nearby organic farm. The first time we were given a root like yours, it was also covered in dirt and I was at a loss. I used it in soups, in Gratins and cooked with barley and diced carrots.

turns out it is delicious roasted with red onions, potatoes, olive oil and seasoning salt. who knew?
