At the Kindergarten where I worked, we got all of our vegetables from a nearby organic farm. The first time we were given a root like yours, it was also covered in dirt and I was at a loss. I used it in soups, in Gratins and cooked with barley and diced carrots. Enguete! Guten Appetite!

turns out it is delicious roasted with red onions, potatoes, olive oil and seasoning salt. who knew?
